Most of the vineyard activities, hoeing included, are rigorously done by hand, while excavating tractors are used for topping and treatments that follow the principles of supervised pest control.
All operations that are part of the productive cycle of the vine always occur under the supervision of the watchful eye of Virgilio, who takes care that the vineyard is treated like a garden, with great respect for the environment and for nature.
The grapes are even picked manually. After an initial selection in the vineyard, the cluster are transported in crates and placed in a refrigerated compartment.
At this point the true and proper selection begins on a vibrating belt. The bunches are chosen, destemmed, and then the individual grapes are selected for the most important varieties.
